Cheesy Beef Tacos with Yellow Rice

Instructions:

Prepare the Beef Filling:

Heat olive oil in a skillet over medium heat.

Sauté onion until soft, then add garlic and cook for 30 seconds.

Add ground beef and cook until browned.

Drain excess fat. Stir in taco seasoning and water. Simmer until thickened, about 5 minutes.

Stir in shredded cheese and mix until melted and creamy.

Prepare the Yellow Rice:

In a saucepan, combine rice, chicken broth, turmeric, cumin, butter, and salt.

Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is fluffy and liquid is absorbed.

Fluff with a fork before serving.

Assemble the Tacos:

Fill each taco shell with a layer of cheesy beef.

Top with diced tomatoes and shredded lettuce.

Serve tacos on a bed of lettuce for added crunch.

Serve:

Plate with a generous scoop of yellow rice on the side.

Optional: Add sour cream, salsa, or avocado slices.
