Instructions:

1. Sear the Beef:

  • Heat 1 tbsp oil in a large cast-iron or oven-safe skillet over medium-high heat.

  • Add the beef cubes in a single layer, seasoning with salt, pepper, and paprika (if using).

  • Sear until browned on all sides (about 3–4 minutes). Remove from the skillet and set aside.

2. Cook the Aromatics:

  • In the same skillet, add the remaining 1 tbsp oil.

  • Sauté the onion until soft (about 3 minutes), then add the garlic and cook for another 30 seconds.

3. Brown the Potatoes:

  • Add the diced potatoes to the skillet, stirring to coat in the oil.

  • Cook for 10–12 minutes, stirring occasionally, until the potatoes are tender and lightly golden.

4. Combine & Melt the Cheese:

  • Return the beef (and any juices) to the skillet, mixing well with the potatoes.

  • Sprinkle the shredded cheese evenly over the top.

  • Cover with a lid or foil and let it sit for 2–3 minutes until the cheese is fully melted.

5. Garnish & Serve:

  • Remove from heat and garnish with fresh parsley or green onions if desired.

  • Serve hot straight from the skillet for maximum comfort!

Optional Variations:

  • Veggie Boost: Add bell peppers, mushrooms, or spinach when cooking the onions.

  • Spicy Kick: Stir in chili powder, cayenne, or diced jalapeños.

  • Tex-Mex Style: Mix in a can of diced tomatoes with green chilies and taco seasoning.
