Instructions:
1. Sear the Beef:

Heat 1 tbsp oil in a large cast-iron or oven-safe skillet over medium-high heat.

Add the beef cubes in a single layer, seasoning with salt, pepper, and paprika (if using).

Sear until browned on all sides (about 3–4 minutes). Remove from the skillet and set aside.
2. Cook the Aromatics:

In the same skillet, add the remaining 1 tbsp oil.

Sauté the onion until soft (about 3 minutes), then add the garlic and cook for another 30 seconds.
3. Brown the Potatoes:

Add the diced potatoes to the skillet, stirring to coat in the oil.

Cook for 10–12 minutes, stirring occasionally, until the potatoes are tender and lightly golden.
4. Combine & Melt the Cheese:

Return the beef (and any juices) to the skillet, mixing well with the potatoes.

Sprinkle the shredded cheese evenly over the top.

Cover with a lid or foil and let it sit for 2–3 minutes until the cheese is fully melted.
5. Garnish & Serve:

Remove from heat and garnish with fresh parsley or green onions if desired.

Serve hot straight from the skillet for maximum comfort!
