Instructions:

  1. Prep the Potatoes:
    • Preheat oven to 400°F (200°C).
    • Wash and scrub the potatoes (peeling is optional). Slice them into ¼-inch thick rounds.
  2. Season the Slices:
    • In a large bowl, toss the potato slices with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  3. Arrange on Baking Sheet:
    • Lay the slices in a single layer on a parchment-lined baking sheet (avoid overlapping for crispiness).
  4. First Bake (Potatoes):
    • Bake for 20-25 minutes, flipping halfway, until the slices are golden and slightly crispy.
  5. Add Cheese:
    • Sprinkle shredded cheese evenly over the potato slices. Return to the oven for 3-5 minutes until the cheese melts.
  6. Garnish & Serve:
    • Remove from oven, sprinkle with fresh parsley or chives, and add optional toppings like bacon or sour cream.
