Directions:
1. Prepare the Steak Rolls:
– Lay the steaks flat on a cutting board. Season both sides with garlic powder, smoked paprika, salt, and black pepper.
– On one side of each steak, spread the mozzarella, blue cheese (if using), chopped spinach, and julienned bell pepper evenly.
– Roll each steak tightly and secure them with toothpicks or kitchen twine.

2. Sear the Rolls:
– Heat olive oil in a skillet over medium-high heat.
– Sear the steak rolls for 2-3 minutes on each side until they are nicely browned. Remove them from the skillet and set aside.

3. Make the Sauce:
– In the same skillet, add the beef broth, scraping up any browned bits from the bottom.
– Stir in the Dijon mustard, heavy cream, and grated Parmesan cheese. Let it simmer until the sauce thickens slightly.
– Add the butter and whisk until the sauce is smooth.

4. Combine and Finish:
– Return the steak rolls to the skillet and spoon the sauce over the top.
– Cover the skillet and let it simmer on low heat for 5-7 minutes, or until the cheese inside melts and the steak reaches your desired level of doneness.

Serving Suggestions:
– Serve these cheesy steak rolls with mashed potatoes or buttered noodles to soak up the delicious sauce.
– Add some roasted vegetables for a complete meal.
– Garnish with fresh parsley or chives for a pop of color.

Enjoy this mouthwatering cheesy steak dish, perfect for a special dinner!
