Instructions:
- Prepare the cauliflower: Cut the cauliflower into bite-sized florets and steam or boil until tender. Drain well and let cool.
- Prepare the eggs: Peel the boiled eggs, rinse, and separate the yolks from the whites.
- Mash the yolks in a bowl.
- Chop the egg whites into small, bite-sized pieces.
- Combine the mashed yolks and chopped whites.
- Make the dressing: In a large mixing bowl, combine Miracle Whip (or mayo), mustard, relish, and chopped onion. Mix well.
- Combine everything: Add the cooled cauliflower and egg mixture to the dressing. Gently fold until evenly coated.
- Season & chill: Add salt and pepper to taste. Cover and refrigerate overnight for best flavor.
- Serve: Garnish with additional egg slices and parsley if desired. Enjoy cold!
