Instructions:

  1. Prepare the cauliflower: Cut the cauliflower into bite-sized florets and steam or boil until tender. Drain well and let cool.
  2. Prepare the eggs: Peel the boiled eggs, rinse, and separate the yolks from the whites.
    • Mash the yolks in a bowl.
    • Chop the egg whites into small, bite-sized pieces.
    • Combine the mashed yolks and chopped whites.
  3. Make the dressing: In a large mixing bowl, combine Miracle Whip (or mayo), mustard, relish, and chopped onion. Mix well.
  4. Combine everything: Add the cooled cauliflower and egg mixture to the dressing. Gently fold until evenly coated.
  5. Season & chill: Add salt and pepper to taste. Cover and refrigerate overnight for best flavor.
  6. Serve: Garnish with additional egg slices and parsley if desired. Enjoy cold!
