Caprese Stuffed Avocados with Sweet Balsamic Glaze

Instructions

1. Make the Balsamic Glaze:

  • In a small saucepan over medium heat, combine balsamic vinegar and brown sugar. Stir until the sugar dissolves.

  • Bring to a gentle simmer and cook for 6-8 minutes, stirring occasionally, until the glaze thickens enough to coat the back of a spoon.

  • Remove from heat and let cool—it will continue to thicken as it cools.

2. Prepare the Caprese Filling:

  • In a mixing bowl, combine cherry tomatoes, mozzarella, chopped basil, and olive oil. Toss gently.

  • Season with salt and pepper to taste.

3. Assemble the Stuffed Avocados:

  • Cut the avocados in half and remove the pits.

  • Spoon the Caprese mixture into the center of each avocado half.

  • Drizzle generously with the balsamic glaze.

  • Garnish with extra basil leaves and a pinch of salt and pepper if desired.

4. Serve & Enjoy!

  • Best served immediately while the avocados are fresh and creamy.
