Cajun Sweet Potato Seafood Chowder

Ingredients

Seafood:

  • 4 cups chicken broth or shrimp broth (low sodium)
  • ½ lb scallops
  • ½ lb shrimp, peeled and deveined

Produce:

  • 1 cup corn (fresh or frozen)
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 lbs sweet potatoes, peeled and diced
  • 2 tbsp fresh tarragon (or 1 tbsp dried tarragon)

Condiments:

  • 1 tbsp fish sauce
  • 1 tbsp lemon juice

Baking & Spices:

  • 2 tbsp Cajun seasoning
  • Salt and pepper, to taste

Oils & Vinegars:

  • 1½ tbsp vegetable oil

Dairy:

  • ½ tbsp butter
