Instructions:

  1. Sauté the Meat:
    • Heat olive oil or butter in a large skillet or Dutch oven over medium-high heat.
    • Add the ground beef or sausage, breaking it apart with a spoon. Cook until browned (about 5-7 minutes). Drain excess fat if needed.
  2. Cook the Aromatics:
    • Add the diced onion and bell pepper to the skillet. Sauté for 3-4 minutes until softened.
    • Stir in the minced garlic and cook for another 30 seconds until fragrant.
  3. Season & Add Cabbage:
    • Sprinkle in the Cajun seasoning, smoked paprika, thyme, oregano, black pepper, and salt. Stir well.
    • Add the chopped cabbage and stir to combine. Cook for 5 minutes, stirring occasionally, until the cabbage begins to wilt.
  4. Simmer:
    • Pour in the diced tomatoes (with juices) and broth. Stir well.
    • Reduce heat to medium-low, cover, and simmer for 15-20 minutes, stirring occasionally, until the cabbage is tender and flavors meld.
  5. Adjust & Serve:
    • Taste and adjust seasoning if needed (add more Cajun spice, salt, or hot sauce for extra heat).
    • Garnish with fresh parsley and serve hot.

Optional: Serve with a side of crusty bread or over cauliflower rice for extra heartiness.
