Instructions

1. Brown the Beef

  • Heat 1 tbsp olive oil in a large pot over medium heat.

  • Add the ground beef, season with salt & pepper, and cook until browned, breaking it apart as it cooks.

  • Transfer the beef to a plate and set aside.

2. Sauté the Veggies

  • Add the remaining 1 tbsp olive oil to the pot.

  • Stir in the onion, red bell pepper, and green bell pepper. Cook for 4–5 minutes until softened.

  • Add the garlic and cook for 30 seconds until fragrant.

3. Simmer the Soup

  • Pour in the diced tomatoes (with juices), tomato sauce, and beef broth.

  • Return the cooked beef to the pot and add the parsley, basil, and oregano.

  • Bring to a boil, then reduce heat to low and let it simmer for 30 minutes, stirring occasionally.

4. Cook the Rice

  • While the soup simmers, cook the rice according to package instructions.

5. Combine & Serve

  • Stir the cooked rice into the soup just before serving (or add a scoop to each bowl).

  • Ladle into bowls and top with shredded cheese and extra fresh parsley, if desired.
