Instructions
1. Brown the Beef

Heat 1 tbsp olive oil in a large pot over medium heat.

Add the ground beef, season with salt & pepper, and cook until browned, breaking it apart as it cooks.

Transfer the beef to a plate and set aside.
2. Sauté the Veggies

Add the remaining 1 tbsp olive oil to the pot.

Stir in the onion, red bell pepper, and green bell pepper. Cook for 4–5 minutes until softened.

Add the garlic and cook for 30 seconds until fragrant.
3. Simmer the Soup

Pour in the diced tomatoes (with juices), tomato sauce, and beef broth.

Return the cooked beef to the pot and add the parsley, basil, and oregano.

Bring to a boil, then reduce heat to low and let it simmer for 30 minutes, stirring occasionally.
4. Cook the Rice

While the soup simmers, cook the rice according to package instructions.
5. Combine & Serve

Stir the cooked rice into the soup just before serving (or add a scoop to each bowl).

Ladle into bowls and top with shredded cheese and extra fresh parsley, if desired.
