Beet Salad with Feta, Cucumbers, and Dill

Ingredients:

  • 3 medium beets, roasted or steamed, peeled and diced

  • 1 large cucumber (English or Persian), diced

  • ½ cup crumbled feta cheese

  • 2 tbsp fresh dill, chopped

  • 2 tbsp red onion, finely sliced (optional)

  • Salt and black pepper, to taste

For the Lemon Vinaigrette:

  • 2 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • ½ tsp honey or maple syrup (optional)

  • Salt and pepper, to taste
