Ingredients:

For the Broth & Beef:

  • 1.5 lbs (700g) beef shank, brisket, or chuck (cut into large chunks)

  • 8 cups (2L) water or beef stock

  • 1 onion (quartered)

  • 4 garlic cloves (smashed)

  • 1-inch (2.5cm) ginger (sliced)

  • 2 star anise

  • 1 cinnamon stick

  • 1 tsp Sichuan peppercorns (optional, for a slight numbing spice)

  • 2 tbsp soy sauce

  • 1 tbsp dark soy sauce (for color)

  • 1 tbsp Shaoxing wine (or dry sherry)

  • 1 tbsp brown sugar or rock sugar

  • 1 tomato (quartered, optional for depth)

  • Salt to taste

For Serving:

  • 12 oz (350g) fresh wheat noodles or dried noodles

  • 2 cups baby bok choy or spinach (blanched)

  • 2 green onions (sliced)

  • Fresh cilantro (chopped)

  • Chili oil or sriracha (optional)
