Banana Foster Pudding

Preparation:

  1. Prepare Egg Mixture:
    • Separate 6 egg yolks and put them in a large bowl.
    • Mix in 125 grams of sugar and 1 tsp vanilla extract until well blended.
  2. Add Bananas:
    • Mash 2 ripe bananas with a fork and add to the egg mixture. Mix well.
  3. Combine with Milk:
    • Pour 1 liter of milk into the egg-banana mixture and whisk together.
  4. Dissolve Cornstarch:
    • In a small bowl, dissolve 3 tbsp of cornstarch in 20 ml of milk. Stir until completely dissolved.
    • Add the cornstarch mixture to the main mixture and stir well.
  5. Cook Pudding:
    • Transfer the mixture to a pot and cook on low heat, stirring constantly to prevent sticking.
    • Cook for around 10 minutes until the mixture thickens.
    • Pour the pudding into 4 small dessert cups and allow it to cool and solidify.
  6. Prepare Bananas Foster:
    • In a pan, melt 10 grams of butter.
    • Add 50 grams of sugar to the melted butter and stir until melted.
    • Slice 1 banana and coat it with the caramel. Stir until the banana is covered with caramel.
  7. Assemble and Chill:
    • Top the banana pudding with the bananas foster.
    • Refrigerate for at least 3 hours or until firm.
