Instructions:
- Prep & Preheat:
- Preheat oven to 375°F (190°C).
- Lightly grease a 9Ă5-inch loaf pan or line it with parchment paper.
- Sauté Veggies:
- In a skillet over medium heat, cook the onions and mushrooms until softened (3â4 mins). Let cool slightly.
- Soak Breadcrumbs:
- In a small bowl, mix breadcrumbs and milk. Let sit for 5 mins to absorb.
- Mix Meatloaf:
- In a large bowl, combine ground beef, ground pork, soaked breadcrumbs, Parmesan, sautéed veggies, bacon, Swiss cheese, eggs, Worcestershire sauce, 1 tbsp ketchup, garlic powder, thyme, salt, and pepper.
- Use hands or a spoon to mix just until combined (overmixing makes it dense).
- Shape & Top:
- Transfer the mixture to the loaf pan, pressing gently.
- Spread œ cup ketchup evenly over the top.
- Bake:
- Bake for 50â60 mins, or until the internal temperature reaches 160°F (71°C).
- Optional: Broil for 2â3 mins at the end for a caramelized top.
- Rest & Serve:
- Let meatloaf rest 10 mins before slicing. This keeps it juicy!
