Apple Fritters
Instructions:

- Heat oil in a deep skillet or pot to 350°F (175°C).
- In a large bowl, mix flour, sugar, baking powder, salt, eggs, milk, and vanilla until smooth.
- Blend in the melted butter.
- Fold in the apple pie spice and chopped apples until evenly distributed.
- Drop about ⅓ to ½ cup of batter into hot oil. Press slightly with a spatula.
- Fry until golden brown on both sides, then drain on paper towels.
- Repeat with remaining batter.
- Dust with powdered sugar before serving, if desired.
