Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease two loaf pans.
- Prepare Batter:
- In a large mixing bowl, cream together the softened butter and 2 cups of sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the buttermilk.
- Gradually add the flour and baking soda, mixing until just combined. Do not overmix.
- Prepare Cinnamon/Sugar Mixture:
- In a small bowl, mix together 2/3 cups of sugar and 2 teaspoons of cinnamon.
- Assemble the Bread:
- Pour half of the batter (or a little less) into the greased loaf pans, dividing it equally between the two pans.
- Sprinkle about 3/4 of the cinnamon/sugar mixture evenly over the batter in each pan.
- Add the remaining batter to the pans, spreading it evenly.
- Sprinkle the remaining cinnamon/sugar mixture on top.
- Swirl:
- Use a knife to swirl the cinnamon/sugar mixture into the batter. This will create a marbled effect.
- Bake:
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool:
- Allow the bread to cool in the pans for 20 minutes before removing from the pans and transferring to a wire rack to cool completely.
- Serve:
