Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease two loaf pans.
  2. Prepare Batter:
    • In a large mixing bowl, cream together the softened butter and 2 cups of sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Stir in the buttermilk.
    • Gradually add the flour and baking soda, mixing until just combined. Do not overmix.
  3. Prepare Cinnamon/Sugar Mixture:
    • In a small bowl, mix together 2/3 cups of sugar and 2 teaspoons of cinnamon.
  4. Assemble the Bread:
    • Pour half of the batter (or a little less) into the greased loaf pans, dividing it equally between the two pans.
    • Sprinkle about 3/4 of the cinnamon/sugar mixture evenly over the batter in each pan.
    • Add the remaining batter to the pans, spreading it evenly.
    • Sprinkle the remaining cinnamon/sugar mixture on top.
  5. Swirl:
    • Use a knife to swirl the cinnamon/sugar mixture into the batter. This will create a marbled effect.
  6. Bake:
    • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool:
    • Allow the bread to cool in the pans for 20 minutes before removing from the pans and transferring to a wire rack to cool completely.
  8. Serve:

Tips:

  • For a richer flavor, you can add a teaspoon of vanilla extract to the batter.
