Instructions:
Prepare the Tomatoes and Spinach:
Heat a tablespoon of olive oil in a skillet over medium heat.
Add the halved cherry tomatoes and sauté for about 3-4 minutes until they soften and start to caramelize. Remove from the pan and set aside.
In the same skillet, sauté the spinach for 1-2 minutes until wilted. Season with salt and pepper. Remove and set aside.
Prepare the Bread:
Spread butter evenly on one side of each slice of bread.
On the unbuttered side of one slice, layer a generous amount of shredded mozzarella cheese.
Assemble the Sandwich:
Add the sautéed spinach and roasted tomatoes on top of the cheese.
Top with a little more cheese for that gooey melt.
Place the second slice of bread on top, buttered side facing out.
Grill the Sandwich:
Heat a non-stick skillet over medium heat. Place the sandwich in the skillet and cook for 3-4 minutes on each side, pressing down slightly with a spatula to ensure even grilling.
Flip the sandwich carefully, ensuring both sides are golden brown and crispy, and the cheese is melted inside.
Serve:
Remove from the skillet and cut in half. Serve hot, with the melted cheese pulling apart in gooey, delicious strands.
