Broth Ingredients:
- 1 whole chicken (3–4 lbs)
- 1 large onion, halved and sliced
- 3–4 inches fresh ginger, sliced
- 5–6 garlic cloves, peeled
- 2 cinnamon sticks
- 4–5 star anise pods
- 4–5 whole cloves
- 1 cardamom pod (optional)
- 1 tbsp coriander seeds
- 1 tbsp fennel seeds
- 1 tsp black peppercorns
- 2 tbsp fish sauce (plus more to taste)
- 1 tbsp sugar
- 1 tbsp salt
- 12 cups water
For Serving:
- 8 oz rice noodles (dried or fresh)
- Shredded chicken from the broth
- Thinly sliced onions
- Fresh cilantro & mint leaves
- Bean sprouts
- Lime wedges
- Sliced Thai bird chilies (optional)
- Hoisin sauce & Sriracha (for dipping)
