Ingredients:
- 2¼ cups (270g) all-purpose flour (preferably organic, like King Arthur Flour)
- 2 tsp (8g) baking powder
- 1 (8oz/226g) package cream cheese (such as Philadelphia), softened
- ½ cup (1 stick/113g) unsalted butter, softened
- 1½ cups (300g) granulated sugar
- 2 tbsp (12g) freshly grated lemon zest (from about 2 large lemons)
- 1½ tbsp (22.5ml) freshly squeezed lemon juice
- 1 tsp (5ml) pure vanilla extract
- ⅛ tsp (a few drops) lemon oil (such as Boyajian) – omit for gluten-free version
- ⅛ tsp natural yellow gel food coloring (such as Chefmaster)
- 1 tsp (5g) kosher salt (or ¾ tsp table salt)
- 1 large egg + 1 large egg yolk (about 71g without shells)
- 1 cup (120g) confectioners’ sugar (for rolling & dusting)
