INGREDIENTS

For the Cake:

  • 200g (1½ cups) all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • 115g (½ cup) unsalted butter, softened
  • 100g (½ cup) brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 60ml (¼ cup) milk or buttermilk
  • 150g (1½ cups) grated carrots
  • 100g (½ cup) chopped dates

For the Cream Cheese Frosting (Optional):

  • 115g (½ cup) cream cheese, softened
  • 60g (¼ cup) unsalted butter, softened
  • 150g (1¼ cups) powdered sugar
  • ½ tsp vanilla extract
