Cheesy Beef Enchiladas – A Comfort Food Classic

These rich, cheesy enchiladas feature seasoned beef, homemade sauce, and melty cheese, baked to perfection.
Ingredients
Beef Filling:
- 1 lb ground beef
- 1 tbsp chili powder
- ½ tsp salt
- ¾ tsp ground cumin
- ½ tsp dried oregano
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ cup tomato sauce
Homemade Enchilada Sauce:
- ¼ cup oil or butter
- ¼ cup flour
- ½ tsp black pepper
- ¾ tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp ground cumin
- ½ tsp dried oregano
- 1 tbsp chili powder
- 2 cups beef broth
- 1 tbsp tomato paste
Enchiladas Assembly:
- ¼ cup canola oil (for softening tortillas)
- 12–15 white corn tortillas
- 1 cup Monterey Jack cheese (plus extra for topping)
How to Make It
- Cook Beef – Brown ground beef, drain, and stir in seasonings and tomato sauce. Simmer 5 minutes.
- Prepare Sauce – Heat oil in a pan, whisk in flour to form a roux, then stir in seasonings, broth, and tomato paste. Simmer 10 minutes.
- Soften Tortillas – Lightly fry tortillas for a few seconds per side.
- Assemble – Fill tortillas with beef mixture & cheese, roll, and place seam-side down in a baking dish.
- Top & Bake – Pour enchilada sauce over tortillas, sprinkle cheese, and bake at 375°F for 30–35 minutes until bubbly.
