Ingredients

Beef Filling:

  • 1 tbsp chili powder

  • ½ tsp dried oregano
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ cup tomato sauce

Homemade Enchilada Sauce:

  • ¼ cup oil or butter
  • ¼ cup flour
  • ½ tsp black pepper
  • ¾ tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp ground cumin
  • ½ tsp dried oregano
  • 1 tbsp chili powder
  • 2 cups beef broth
  • 1 tbsp tomato paste

Enchiladas Assembly:

  • ¼ cup canola oil (for softening tortillas)
  • 12–15 white corn tortillas
  • 1 cup Monterey Jack cheese (plus extra for topping)

How to Make It

  1. Cook Beef – Brown ground beef, drain, and stir in seasonings and tomato sauce. Simmer 5 minutes.
  2. Prepare Sauce – Heat oil in a pan, whisk in flour to form a roux, then stir in seasonings, broth, and tomato paste. Simmer 10 minutes.
  3. Soften Tortillas – Lightly fry tortillas for a few seconds per side.
  4. Assemble – Fill tortillas with beef mixture & cheese, roll, and place seam-side down in a baking dish.
  5. Top & Bake – Pour enchilada sauce over tortillas, sprinkle cheese, and bake at 375°F for 30–35 minutes until bubbly.
