Apple Slab Pie

A large-format apple pie perfect for serving a crowd, baked in a sheet pan and cut into squares for easy enjoyment.
Ingredients
For the Crust:
- 3¾ cups all-purpose flour (470g)
- 1½ tbsp sugar
- 1½ tsp salt
- 3 sticks unsalted butter (12 oz or 340g), cold & cut into pieces
- ¾ cup very cold water
For the Apple Filling:
- 3½–4 lbs apples, peeled, cored & chopped (about 10 cups)
- Juice of ½ lemon
- ⅔–¾ cup sugar (adjust based on apple sweetness)
- 3 tbsp cornstarch
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- ¼ tsp ground allspice
- ⅛ tsp salt
For Finishing:
- 2 tbsp heavy cream or 1 beaten egg mixed with 1 tbsp water
