Ingredients:

For the Olive Salad:

  • 1 cup (150g) pitted green olives, chopped

  • 1 cup (150g) pitted black olives, chopped

  • ½ cup (75g) roasted red peppers, chopped

  • ½ cup (60g) pickled giardiniera, chopped

  • 2 garlic cloves, minced

  • ¼ cup (60ml) extra-virgin olive oil

  • 2 tbsp (30ml) red wine vinegar

  • 1 tsp (5g) dried oregano

  • 1 tsp (5g) dried basil

  • Salt and black pepper, to taste

For the Sandwich:

  • 1 large round Italian or French bread loaf (9-10 inches)

  • 4 oz (115g) sliced Genoa salami

  • 4 oz (115g) sliced mortadella

  • 4 oz (115g) sliced chicken ham

  • 4 oz (115g) sliced provolone cheese

  • 4 oz (115g) sliced mozzarella cheese
