Instructions
1️⃣ Sauté Aromatics
- Heat a large skillet or pot over medium heat. Add a splash of oil, then sauté the onion until soft (about 3-4 minutes).
- Add the garlic and ginger, cooking for another minute until fragrant.
2️⃣ Cook the Chicken
- Add the chicken pieces and cook until lightly browned (about 5 minutes).
3️⃣ Add Curry Base
- Stir in the green curry paste and cook for 1 minute to release the flavors.
- Pour in the coconut milk, vegetable broth, soy sauce, and brown sugar. Stir well and bring to a gentle simmer.
4️⃣ Simmer & Add Veggies
- Reduce heat to medium-low and let the curry simmer for 10 minutes.
- Add the sliced bell pepper and cook for another 5 minutes until slightly tender.
- Stir in the baby spinach until wilted (about 1-2 minutes).
5️⃣ Finish with Lime & Serve
- Remove from heat and stir in the lime juice.
- Taste and adjust seasoning (add more lime, sugar, or salt if needed).
- Garnish with fresh basil and serve with lime wedges over jasmine rice.
