Instructions

1️⃣ Sauté Aromatics

  • Heat a large skillet or pot over medium heat. Add a splash of oil, then sauté the onion until soft (about 3-4 minutes).
  • Add the garlic and ginger, cooking for another minute until fragrant.

2️⃣ Cook the Chicken

  • Add the chicken pieces and cook until lightly browned (about 5 minutes).

3️⃣ Add Curry Base

  • Stir in the green curry paste and cook for 1 minute to release the flavors.
  • Pour in the coconut milk, vegetable broth, soy sauce, and brown sugar. Stir well and bring to a gentle simmer.
