Instructions:

Prepare the Cod:

Pat the cod fillets dry with paper towels and season with salt and pepper on both sides.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the cod fillets to the skillet and sear for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Prepare the Sauce:

In the same skillet, add the remaining tablespoon of olive oil.
Add the chopped onion and sautรฉ until translucent, about 3 minutes.
Add the minced garlic and red pepper flakes, and sautรฉ for another 30 seconds until fragrant.
Stir in the halved cherry tomatoes and cook until they begin to soften and release their juices, about 5 minutes.
Pour in the vegetable or chicken broth and white wine (if using), and bring to a simmer. Let it cook for about 5 minutes to allow the flavors to meld.
Stir in the chopped basil and lemon juice, and cook for another 2 minutes.

Combine and Serve:

Return the seared cod fillets to the skillet, nestling them into the tomato basil sauce.
Spoon some of the sauce over the cod fillets and let them heat through for about 2 minutes.

Garnish with fresh basil leaves and serve immediately.
